Hygiene practices associated with the sale of stuffed bread and local beverages in school settings in the cities of Ouagadougou and Bobo-Dioulasso, Burkina Faso

Street food vending in school settings is one of the main sources of food for students in Burkina Faso. However, it represents a potential risk of foodborne diseases when hygiene practices are not properly followed. This study aimed to assess hygiene practices associated with the sale of stuffed bread and local beverages in primary schools in the cities of Ouagadougou and Bobo-Dioulasso, Burkina Faso. A cross-sectional study was conducted among 499 street food vendors operating within or near primary schools. Data were collected using a structured questionnaire based on the 5M method. Hygiene scores were calculated for both stuffed bread and local beverages. Statistical analyses were performed using the Mann–Whitney and Kruskal–Wallis tests, with a significance level set at p < 0.05. The results showed that street food vending in the study sites was predominantly carried out by women (98.2%), with 41.68% of the vendors having a low level of education. Hygiene scores varied significantly according to the city, type of school, vendors’ educational level, and training in good hygiene practices. The lowest scores were observed for personal hygiene and food transport conditions, for both stuffed bread and local beverages. In contrast, the sales environment showed relatively consistent scores (~5 for beverages and ~0.8 for stuffed bread). Hygiene training was significantly associated with better overall scores for beverage sales (p = 0). Overall, the hygiene practices observed in street food vending in school settings remain insufficient and expose students to potential health risks. Strengthening vendor training, improving sales conditions, and implementing appropriate sanitary supervision could help enhance food safety in school environments in Burkina Faso.
