Abstract

Pulses are of interest to solve the problem of food, nutrition and therapeutic deficits
in the world. In Burkina Faso, several legumes, including mung bean, are grown and
consumed by the population. The objective of the study was to assess the introduction
of mung bean in Burkina Faso through a questionnaire administered to stakeholders. A variety of mung bean is registered in the seed catalogue under the name of 'Bengtigré' and popularised. It is served in school, university, hospital and military camp
canteens and is eaten alone or in combination with cereals. It is used in the prevention
and recovery of malnourished children at the CREN in Larlé. 75.6% of consumers use
dishes derived from mung bean to benefit from its virtues. 9.91% have experienced it
with satisfaction in the regulation of arterial hypertension and glycaemia. Mung bean
is a promising commodity because of its resilience and ease of production. Rich in
nutrients and bioactive molecules, it can help reduce the prevalence of malnutrition
and its consequences.
