Abstract

The present study was initiated to characterise the meat of pigs slaughtered and inspected in the slaughter area of the urban commune of Koudougou in Burkina Faso and to evaluate the seizures made and the associated financial losses. To this end, a monitoring of ante and post mortem inspection of pigs was carried out in combination with a field survey to collect data. Analysis of this data reveals that 3616 pigs were slaughtered and inspected over the period April to June 2018. These pigs were of local (95.3%), mixed (4.06%) and Large White (0.63%) breeds with a mean age of 7.7 ± 1.4 months. The reason for leaving was the need for money. Seizures were carried out for total seizures due to cysticercosis (88.89%) and putrefaction (11.11%) and for partial seizures due to pulmonary emphysema (53.2%), congestion (33.9%) and cysticercosis (4.88%). These resulted in a financial loss of 472,150 CFA francs to the butchers. These results show that appropriate zootechnical and sanitary measures must be considered by all stakeholders in order to guarantee the health of consumers and limit the financial losses of butchers.
